Globe artichoke (Cynara scolymus) 'Vert de Provence' is an old French variety with large, deeply cut dark green leaves and fleshy green heads prized in Mediterranean cooking. Buy 'Vert de Provence' artichoke plants in a 9 cm pot in Estonia from the ALLIKASILM nursery.
Height 1–1.5 m, spread 0.8–1 m. Heads are harvested from July to September; plants set out early crop in their first year. Uncut buds open into striking blue-violet flowers, so the artichoke also decorates an ornamental vegetable garden.
Suited to a sunny bed or large containers. It is a perennial but tender (to about −12 °C) – in Estonia it is grown as an annual or overwintered under thick cover or in a cool cellar.

Agronomin neuvot
Planting. Plant out in the second half of May, after the frosts, in the sunniest spot available, in fertile soil enriched with compost. Space plants about 1 m apart.
Watering and feeding. Artichokes are hungry and need regular watering, especially while the heads are forming; avoid waterlogging. Feed every 2–3 weeks with a balanced fertiliser or compost tea.
Care. Cut the central head while its scales are still tight, with 5–10 cm of stem – side heads will follow. Mulch keeps the roots from drying out.
Gardener's tip. To overwinter in Estonia, cut the plant back in autumn and cover it with a thick layer of dry leaves and spruce branches, or lift it with its root ball and keep it in a cellar at 0–5 °C.
