Celeriac Apium graveolens var. rapaceum "Albin" is a mid-early Czech variety with large, round, unbranched roots. Buy celeriac "Albin" seeds in Estonia from the ALLIKASILM nursery: the AGRONOM packet holds 0.2 g of seed.
The flesh is white and stays white even after frost or cooking, and the roots do not go hollow. According to the producer the variety is disease-resistant, and the roots are good for winter storage, soups, salads and stews. The crop is ready 120–140 days after planting out.
In Estonia celeriac is grown from transplants: sow in February–March and plant the seedlings out in May. It does best in medium-heavy, humus-rich, well-worked soil that does not stay waterlogged.

Agronomin neuvot
Planting. Sow in February–March on the surface of moist seed compost, press lightly and do not cover – celery needs light to germinate. Cover the tray with film or glass, keep at 20–22 °C and air it daily. Prick out at the 2–3 true-leaf stage, harden off and plant out in May at 40 × 40 cm with the crown at soil level.
Watering and feeding. Celeriac needs steady moisture all summer – in drought the roots stay small and stringy. Dig in compost or well-rotted manure before planting and give a potassium-rich feed in the second half of summer.
Care. Do not earth up: in July–August pull a little soil away from the root and remove side roots so the root stays smooth and round. Weed regularly.
Gardener's tip. The roots tolerate light frost, so lift them in October before hard frosts. Trim the leaves and store the roots in damp sand in a cool cellar – they keep until spring.
