Planting. Sow from March to early May, 1 cm deep, germinate at 18–20 °C, then grow the seedlings on somewhere cool (12–15 °C) and bright. Plant out hardened seedlings with 4–6 leaves in late May–June, 50 × 50 cm apart, in fertile, limed soil.

Watering and feeding. Cauliflower hates drought and checks in growth – water regularly so the soil stays evenly moist. Dig in compost before planting and feed 2–3 times with a nitrogen- and potassium-rich vegetable fertiliser; boron deficiency causes brown patches.

Care. When the curd is egg-sized, snap or tie a few leaves over it so it stays white out of the sun. Protect young plants from flea beetles and cabbage moth with fleece.

Gardener's tip. Cut the curds while firm and smooth – an over-mature curd loosens and turns grainy. Sow 2–3 times three weeks apart for fresh cauliflower until autumn.
